There are times that dinner has to happen on the fly. Seems to be more of those type of nights these past couple weeks. When we mean on the fly we mean it needed to be ready like 5 minutes ago. One of the best meals I’ve found for this is totally easy to put together and nobody complains when I say that dinner is ready. This Low Carb Sausage And Vegetable Skillet recipe.

It’s actually pretty much a sped up version of our crockpot sausage and peppers dinner.

If you can chop veggies in a few minutes and slice a couple sausages, you’ve got this one in the bag. Or should I say, the skillet. It’s a great way to get your veggies for the day too.

WHAT TYPE OF CARBS ARE IN BELL PEPPERS USED IN THIS SAUSAGE AND Vegetable Skillet Dinner

  • Red, Yellow and Orange bell peppers are higher in carbs.
  • Green Peppers are the way to go as they are lower in carbs compared to the above.

We’ve been buying a variety pack of peppers these days so that’s what you see. Now as I’ve said in the past as well, like with our buffalo sloppy joes, it’s a vegetable so we aren’t very strict to those carb counts. Just keep in mind if you use the other peppers that your carb nutrition will change.

In fact, if you feel like this is too high in carbs for you, simply replace the red bell pepper with an extra green pepper and cut back a bit on the onions. But this was a really great meal and the best part is that I was full for the rest of the night. No cravings or munchies! I still have that old habit of snacking at night. It’s totally mental and a habit I’m working hard to break! So if a meal can help me avoid that, I’m all for it.

Orrrrrr I just fall back onto a square of our low carb chocolate. 😉

You can use any of your favorite sausage for this recipe. I personally love an herb flavored sausage myself but if you’d like to kick the heat up like with this low carb jambalaya a cajun sausage would be divine.

Ingredients

  • 3 tbsp. oil
  • 2 standard fully-cooked sausages (I used a garlic herb sausage)
  • 1/2 small yellow onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 4 oz. sliced white mushrooms
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 1/2 tsp. ground, black pepper
  • salt to taste if needed after cooking

Instructions

  • Warm the oil in a medium to large skillet.

  • Add the veggies and saute until they are al dente. Add in the sausages and warm through.

  • Cool slightly and serve.
